Shrimp Creole

Ingredients

  • 6 tbsp. Oil
  • 6 tbsp. Flour
  • 2 cups Onions, chopped
  • 1 cup Celery , chopped
  • 1 cup Bell pepper, chopped
  • 1 cup Green Onions, chopped
  • 3 cloves garlic, minced
  • 1 16 oz. Can tomato sauce
  • 1 16 oz. Can tomatoes chopped
  • 2 bay leaves
  • 1 tsp. Black Pepper
  • 1 tsp. Thyme
  • 1 tsp. Basil
  • 1 tsp. Salt
  • ½ tsp Cayenne Pepper
  • 1 tbsp. Worchester Sauce
  • 1 cup water
  • 3 LB. Peeled Shrimp

Directions

Heat oil in large heavy pot. Add flour and stir constantly to make a medium brown roux. Add onion, celery, bell pepper and green onion. Saute until limp. Add garlic, tomato sauce, tomatoes, bay leaves, black pepper, thyme, basil, salt and cayenne pepper. Cook 15 minutes , Add Worchester Sauce and water and bring to a boil. Add shrimp and simmer about 20 minutes.
