Codfish Cakes

Ingredients

  • 2 lbs Dry Codfish
  • 4 lbs potatoes
  • 1 ¼ Cups Finely Chopped Onions
  • 2 Eggs
  • ¼ Cup Parsley
  • ½ Teaspoon Pepper
  • ½ Teaspoon Baking Powder
  • 2 Handfuls Cracker Meal

Directions

Soak Codfish overnight. Next day rinse in cold water. Put in pot and cover with water. Cook about 30 to 40 minutes depending on thickness. Drain in colander and shred. Add onions, eggs, parsley and pepper. Mash potatoes. Put the potatoes into the cod fish mixture. Add cracker meal and mix well. Using a ice cream scoop, shape and mixture into balls.

Take a bowl and put some cracker meal and about ½ teaspoon baking powder. Taking the balls and make them into the cake and put the cracker meal mixture on both sides.

Heat the grease. Take pitch of some of the codfish cakes and place it into the grease to test to see if the grease is ready. Once grease is ready, place the codfish cakes into it. Finally deep fry the cakes until golden brown.
